Totally agree, I stay in 16 bit mode all the way, dropping to 8-bit only
when essential - mostly only where file size is an issue.
But, as I said earlier, you do need a lot of computer. One of my work files,
initially 130mb, saved to hard disk with layers, came out at 1.2 gigabyte
tiff.

Seems to me the big advantage of 16 bit is to get things that stretch or
compress color detail, histogram, curve, etc., right before converting
to 8 bit. That way any loss in brightness detail is at the stage where
there is 'excess' data, so the final image is largely unaffected.
