Hand-held, you've got one stop and two speeds (500/1000) on an OM. Too
tight. The only ways to get flexibility are using a monopod (250 is safe,
125 is risky) and faaaaasst film like 800/1600. Then you can knock it down
with ND filters but if you return to regular lenses you're stuck with
super-fast film on a sunny day :-(
Any way around it's awkward - you aren't going to do any casual shooting
unless conditions are just right and better forget slides.
As to horror bokeh - well, there's always Photoshop!
