In addition to Canyon Lands and Cedar Breaks in southern Utah
you should checkout Bryce, Zion, Arches, Capitol Reef, Mesa Verde
and some of the sights father south such as Monument Valley.

Looks like you will be driving six hours or more per day, and covering 7000
miles. What a trip, Hope you have a wonderful time. From your list of
states looks like you plan to take I-40 across Arizona on your way home. If
you have time you should detour north at Flagstaff and visit the Grand
Canyon. If you have more time go further north to the canyon lands in
Southern Utah, not as big as the Grand Canyon, but IMHO much more
breathtaking. I think Cedar Breaks is the best of the bunch.
