By adding text, you automatically add a layer. To save as anything other
than a .PSD file you must either "flatten" (Layer/Flatten image) or
"merge" (layer/merge layers). After that you should be able to save as a
JPEG.
You could also record the whole process in your "actions" pallete as an
automated process (but explaining how to do that is beyond my PS
abilities...I just hack at it ;-)...)
