One of a few things: you could keep the temp slightly above normal so
that you would automatically get less condensation, you could get a
dehumidifier (not too cheap and a bit bulky, essentially a small air
conditioning unit that condenses the water out of the air onto a coil
and then drains it), you could build same using, say, a chilled-water
supply, or you could use a bunch of silica gel or even that hygroscopic
stuff (consumable) sold for keeping mold out of closets. You're only
talking a few cubic feet, so once you get the water out of that air, you're
good till the next time you open it...
