The mirror going up triggers the shutter by means of a mechanical linkage. If
the total friction of the mechanical aperture stop down exceeds the force
needed to swing the mirror fully up, it won't. A diaphragm mechanism of one
of your lens is probably slightly sticky allowing the mirror up to work in
some camera but not others.
Try different lens/converter/body combinations to check this out.
