Doesn't the hilite button only work with spot metering? So for average
metering, it's the asa/adjust dial.
Also, an old trick is to meter caucasian skin to be one stop overexposed.

compensation button, and it generally has worked very well for me. On the
other hand, I frequently spot-meter off of the true subject (if it isn't
the snow, of course), and make any guesstimates I need to after that. If
you're really concerned, pack a grey card around and meter off of that,
then snap your photo (assuming, of course, that the subject you're shooting
isn't fleeting).
