Hi,
Yesterday evening I shopped around a bit at some local camera shops. It
proved to be quite valuable for the decision making process. First of all,
almost all the stores had a wide variety of Lowepro bags, but hardly any of
the other mentioned brands.
Now, given the list of recommended bags, I'll give some remarks:

Not bad, but the camera compartment (i.e. the lower half of the bag) was a
bit too small for the equipment I'd like to carry. The upper half would
require custom modification if it's to be used for camera gear.

I've only seen one of them (the 608 pro 8), it was quite o.k. and had a
softer kind of material than the Lowepros that I checked. Advantage: the bag
is flattened if it's not fully filled and it feels comfortable on the hip.
Disadvantage, it comes standard with one divider containing 4 (fixed)
compartments, this has about the size of half the bag. Other compartments
are optional (+/- $40 each), but it doesn't seem to be as flexible in terms
of customising the layout and size of the different compartments.

Yesterday I didn't check into the custom made camera bags, so no comments on
those.

I haven't seen one, but based on their correlation between size and type
number it may be too small, but then again, maybe the Nova 1 is actually
bigger than then Nova 2 and 3 ?!?

I didn't see any of those, unfortunately.

Both appear to be good "hipbags". I checked out the Nova 4, and size-wise it
looks quite good. However, it is a bit too easily recognisable as a camera
case, and it might be annoying to have to walk around with it all day long.
It has great accessibility, though.

>From the bags I've seen so far, this seems to be my favourite; the size is
sufficient, yet not too big, it is easily configurable in custom
compartments and can easily carry 2 SLRs with some 8 lenses and other stuff.
A disadvantage is that it's a backpack model, so it's not as easily
accessible as the Nova 4, but the advantage of this is that it looks more
like a regular (small) backpack, thus yielding a higher level of stealth. It
seems this is the type of bag I want to focus on. I'm about to go downtown
to check Lowepro's street and outdoors series (I think they were called like
that), and then I should know a lot more...
