Those two dashes (and a space) are added so that up to date software
will automatically strip out the subsequent signature file from any
reply. The folks who don't get rid of them only exacerbate the problem!
The single dash you have added in front of them on your signature, for
example, prevents this from working and requires to be manually cut.
